I need to make food on the weekend to cook. That way during the week when I come home from class, I can just grab something out of the fridge and run to work.
Hey. I'm Carrie Sweet's niece, also living in Logan. If you don't mind leftovers, I have a few good recipes that wouldn't keep you cooking all weekend. A few quick ideas: lasagna, shepherd's pie, mashed potatoes. One thing that my husband and I like to do is cook up a whole bag of noodles then throughout the week we nuke them with butter and garlic salt (or seasoning of your choice). That makes for a good, quick meal. (p.s. I love looking at your blog. Carrie recommended reading it a couple of times and I just have a blast because I can relate to your Logan stories and such.) My recommendation: Boil 2 chicken breasts shred chicken. Add 8 oz of cream cheese, a can of mushrooms, salt and pepper. Mix
get some biscuit mix (bisquick) Make a little biscuit patty and flatten out,add a spoon full of chicken mix and make a turnover-type empanada. Dip in butter and bread crumbs. Cook to what biscuit mixture says.
get a can of cream of chicken soup, add some milk and pour over chicken and some white rice. Yummy.
